Try Rhubarb In Your Paleo Diet !

Have you heard about this mysterious vegetable and in fact many would say it's a fruit? 

Rhubarb is commonly considered as a vegetable obviously due to its large leaves which are somewhat triangular in shape with long fleshy stalks. Although the leaves are not being eaten due to its toxicity, other parts such as the stalk have medicinal and culinary uses. Fresh raw stalks are crisp with a strong bitter-sweet taste. Most commonly the rhubarb stalks are cooked with sugar and baked in pies and other desserts.

In traditional flavoring, rhubarb is served with ice-cream or cream. Its naturally bitter-sweet taste is usually disguised by a few heaps of sugar, and no doubt if you tried some fresh rhubarb today you would be left squinting a little.

Rhubarb isn't extremely versatile, it must be said, but nevertheless it contains solid health benefits. It is a good source of fiber, calcium, and vitamin C, and is said to reduce cholesterol and heartburn. It is also recommended by dieticians to combat hot flushes in menopausal women.


You can try and use rhubarb in your daily diet and amongst some preparation tips are:
  • For a refreshing summer-come-spring dessert, simmer it in honey and served with whipped coconut cream; a positive paleo alternative to buying dairy-laden cream or ice-cream.
  • To add as a natural sweetener, crush up strawberries, raspberries and blackberries and add rhubarb to this mix.
  • If you want to go a little further and serve this up to dinner guests, alternately layer a sundae glass with the simmered rhubarb and whipped coconut cream; then decorate on top with ground nuts, dried fruit and/or desiccated coconut.
  • Rhubarb is also awesome within tarts, but be sure to use almond meal or another paleo-friendly option for the tart base such as the chestnut pastry I use for some recipes within Paleo Sweets.

A Paleo Dessert For You : Green Tea Crème Brûlée

Crème Brûlée (pronounced as krehm broo-LAY) also known as burnt cream serves as a dessert in the table after having the main dish. This consists of a rich custard base which is traditionally flavored with vanilla, but can also be flavored with other varieties such as lemon, rosemary, chocolate, coffee, liqueurs, pistachio, coconut, other fruit, and for this time we will  use green tea as our dessert for the day. Topped with complementing layer of hard caramel and usually served cold, this classic french dessert gets a dose of Asian flavor so delightful to taste.




Green Tea Crème Brûlée

Serves 6

Need a blow torch to carmelize sugar

Ingredients:

5  Eggs
2  tbsp Sugar
1 1/4 cups    Fresh Milk
1/3 cup        Sweet Green Tea powder
1 1/4 cups    Heavy cream

  1. In a saucepan, combine fresh milk and sweet green tea powder.
  2. Over low heat, scald milk and stir until green tea dissolves.
  3. Add the heavy cream and mix well.
  4. In a bowl, beat together 2 eggs, 3 egg  yolks, and 2 tbsp sugar.
  5. Pour one-third of the milk mixture into the eggs and whisk to mix.
  6. Add the rest of the milk mixture, mix well and strain.
  7. Divide the mixture equally among 6 small ramekins.
  8. Bake in a bain-marie in an oven preheated to 325F for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  9. After baking, put in the refrigerator to chill.
  10. When ready to serve, sprinkle each ramekin with 1 tbsp sugar and using a blow torch, carmelize the sugar until golden brown.

How About A Paleo Dessert to Complete Your Meal





Include a Paleo dessert to complete your meal!

 Here's the World's Easiest Paleo Brownie you can prepare to digest !


Makes 10 

Ingredients:

1/2 cup coconut oil
1/2 cup good quality cocoa powder
1/2 tsp ground cinnamon
1/2 cup coconut milk
2 tbsp honey
1 egg
1 cup almond
Good quality cocoa powder to dust (optional)

Instructions:

Preheat a fan-forced oven to 160° Celsius/325° Fahrenheit.

Place the coconut oil, cocoa powder and cinnamon in a bowl and combine well. Add the coconut milk, honey, egg and almond meal and mix until combined.

Line a small brownie tin or cake loaf tin with baking paper. Spoon the brownie mixture into the tin and smooth the surface of the mixture.

Place in the oven for 20 minutes. Remove and allow to cool to room temperature before transferring to the refrigerator for 60 minutes.

Dust the brownie with cocoa and cut into individual portions to serve.
